Traditional Indian Raita recipe

3 cucumbers. ½ cup yogurt. 1 teaspoon black pepper. ½ teaspoon salt. 1 tablespoon cilantro, sliced. Process for simple raita salad. Cut into thin slices of cucumber with a vegetable cutter or food processor into julienne cut.; Wrap grated cucumber in a paper towel and squeeze for dry.

Add cooked spinach, cumin powder, black salt and salt in the whisked curd and mix well. Heat oil for tempering in a pan. Once the oil is hot, add cumin seeds, mustard seeds, dry red chillies, and curry leaves and let them crackle for a few seconds. Pour the tempering over the raita.
